Custom Reports from MOSS Training Guide

We just installed the Microsoft® Office SharePoint® Server 2007 Training kit . How can we create additional reports? I currently see reports that show all of the courses and who has attended them. I would like to flip this around and show the students and which courses they have watched. I can't find any info on how to do this.

Any tips or instructions would be greatly appreciated.
